Ingredients
š„ 2 large eggs soft-boiled for 2 minutes
š 10 ml lemon juice approximately 2 teaspoons
š§ 1/2 teaspoon salt
š§ 15 ml water approximately 1 tablespoon
šæ 200-240 ml vegetable oil
š„ 2 traditional Chilean Marraqueta/Pan Amasado style buns assumed homemade by "Hacedor de Pan"
š„© 300-400g sliced cooked beef

1-2 large tomatoes peeled and sliced
š„ 200-300g green beans julienned and cooked
š¶ļø 1 green chili aji verde sliced thinly
Instructions
1- Prepare the Eggs:
- Boil the eggs for 2 minutes to achieve a soft boil.
- Transfer immediately to a bowl of cold water to stop cooking and make peeling easier.
2- Make the Mayonnaise:
- Crack the cooled, soft-boiled eggs into a tall glass jar.
- Add lemon juice, a pinch of salt, and water to the jar.
- Using an immersion blender, start blending the mixture at the bottom of the jar.
- Gradually drizzle in the vegetable oil in a thin stream while continuously blending until a thick, creamy consistency is achieved.
- Taste and adjust the seasoning by adding more salt if necessary.
3- Prepare the Vegetables:
- Peel and slice the tomatoes.
- Julienne and cook the green beans if not pre-cooked.
- Thinly slice the green chili.
4- Assemble the Chacarero Sandwich:
- Cut the bread buns in half.
- Spread a generous amount of homemade mayonnaise on each half.
- Layer the sliced tomatoes on the bottom halves.
- Add the sliced cooked beef.
- Top with the julienned green beans.
- Finish with thin slices of green chili.
- Place the top halves of the buns to close the sandwiches.
