Ingredients
🥩 500g ground lamb or beef, preferably from a trusted local butcher
🧅 1 large onion, finely chopped
🌿 2 tablespoons fresh cilantro, finely chopped
🧄 2 cloves garlic, minced
🧂 1 teaspoon salt
🌶️ 1 teaspoon cayenne pepper
🌾 2 cups all-purpose flour
💧 1 cup water
🧈 2 tablespoons ghee or clarified butter, some brands like Organic Valley are recommended
🍅 2 cups tomato sauce, preferably Mutti
🥄 1 teaspoon cumin seeds
🍋 Fresh lemon wedges, for serving
Instructions
1- Prepare the Dough:
- In a medium bowl, combine the all-purpose flour and water to form a smooth dough. Knead the dough for about 10 minutes until elastic.
- Cover and let it rest for at least 30 minutes.
2- Prepare the Filling:
- In a large mixing bowl, combine the ground lamb or beef, chopped onion, cilantro, minced garlic, salt, and cayenne pepper.
- Mix thoroughly until all ingredients are well incorporated.
3- Assemble the Dumplings:
- Divide the dough into small balls. Roll each ball out on a lightly floured surface into thin circles.
- Place a tablespoon of the meat filling in the center of each dough circle. Fold the dough over the filling to form a half-moon shape, and seal the edges by pinching them together.
4- Cook the Dumplings:
- Heat ghee in a large skillet over medium heat. Sauté the cumin seeds for about 30 seconds until aromatic.
- Add the dumplings to the skillet without overcrowding. Cook for 3-4 minutes on each side or until golden brown.
- Pour the tomato sauce over the dumplings, cover, and let them simmer on low heat for about 20 minutes.
5- Serve:
- Transfer the cooked dumplings to a serving platter. Drizzle some of the sauce from the pan over the top.
