Ingredients
š 4-5 lbs bone-in goat meat
šæ 1 1/2 tablespoon homemade Caribbean Green Seasoning
š§ 1 teaspoon sea salt preferred by the chef
š¶ļø 1/2 teaspoon freshly ground black pepper
š 1 1/2 tablespoon curry powder ensure gluten-free

1 medium onion, sliced

1 medium tomato, sliced
š¶ļø 1 scotch bonnet pepper, stem removed
š„ 1 tablespoon grated fresh ginger
šÆ 1 1/2 tablespoon golden brown sugar
š« 1 1/2 tablespoon olive oil
š§ 5-8 cloves garlic
š° 3-4 cups hot water
š„„ 1/2 cup coconut milk powder or alternatively, 2 cups liquid coconut milk
š 2 limes, juiced for washing the goat meat
šæ 1-2 tablespoons fresh parsley, chopped for garnish
Instructions
1- Prepare the Goat Meat:
- Wash 4-5 lbs of bone-in goat meat using the juice of 2 limes and cool water.
2- Season the Goat:
- In a large bowl, mix the washed goat meat with 1 teaspoon sea salt, 1 1/2 tablespoons curry powder, and 1/2 teaspoon freshly ground black pepper.
- Add 1 1/2 tablespoons of homemade Caribbean Green Seasoning, 1 medium sliced onion, 1 scotch bonnet pepper, 1 medium sliced tomato, and 1 tablespoon of grated fresh ginger. Mix well to coat the meat evenly.
- Marinate the meat in the refrigerator overnight or for at least 2 hours.
3- Caramelize the Sugar:
- Heat 1 1/2 tablespoons of olive oil in a red Crockpot Dutch Oven over high heat.
- Add 1 1/2 tablespoons brown sugar and stir constantly until it turns dark amber. Be cautious not to burn it.
4- Brown the Goat:
- Add the marinated goat meat to the pot, stirring well to coat the meat with the caramelized sugar.
- Reduce the heat to medium and add 5-8 whole garlic cloves. Cover and cook for 10-15 minutes to let the meat release its juices.
5- Reduce Liquid:
- Remove the lid and increase the heat to high. Stir occasionally for 4-5 minutes until the liquids evaporate and oil is visible.
6- Add Water and Coconut:
- Pour 3-4 cups of hot water into the pot and mix in 1/2 cup coconut milk powder (adjust water if using liquid coconut milk).
7- Simmer the Stew:
- Bring to a boil, then reduce to a simmer. Cover and cook for at least 2 1/2 hours until the meat is tender. Stir and add more water if needed.
8- Final Touches:
- Taste and adjust salt if necessary. Modify gravy thickness by adding water or simmering uncovered.
- Stir in fresh parsley before serving.
