Ingredients
🌾 ½ cup Bulgur Wheat
🍅 2 Ripe Tomatoes
🧅 ½ Onion
🌿 1 ½ cups of Fresh Parsley Leaves
🍃 ¾ cup of Fresh Mint Leaves
🍋 Juice of 1 Lime
🫒 ¼ cup Olive Oil
🧂 Salt
🥬 Mini Romaine Lettuce Leaves
Instructions
1- Hydrate the Bulgur:
- Place the bulgur wheat in a medium mixing bowl.
- Cover with water and let it soak for 15 minutes.
2- Prepare the Tomatoes:
- While waiting, slice the tomatoes in half, scoop out the seeds and pulp.
- Slice each half into strips, then cube the strips finely.
- Transfer to another mixing bowl.
3- Prepare the Onion:
- Finely dice half an onion and mix it with the tomatoes.
4- Chop the Herbs:
- Wash and dry the parsley and mint leaves thoroughly using a salad spinner.
- Roughly chop and add them to the tomato and onion mixture.
5- Mix the Salad Base:
- Squeeze the juice of one lime over the mixture.
- Add olive oil and salt, then stir everything together.
6- Finish the Bulgur:
- Pour the soaked bulgur into a cloth-lined sieve to drain.
- Twist the cloth into a sachet to squeeze out any excess water from the bulgur.
7- Combine:
- Gently fold the drained bulgur into the tomato and herb mixture.
- Mix with a spoon, tasting for seasoning and adjust as needed.
8- Serve:
- Scoop the tabouleh onto a serving plate or shallow bowl.
- Arrange with mini romaine lettuce leaves on the side.
