🥄 Vinegar, Minha Receita "Vinagre de Álcool"
🌶️ Black Pepper, whole peppercorns
🔥 5 drops Cumari Pepper, "Pimenta Cumari"
Instructions
1- Prepare the Marinade:
- In a Mondial blender, combine the peeled garlic cloves, chopped onions, juice of one lemon, water, vinegar, black pepper, and cumari pepper.
- Blend until smooth.
2- Season the Pork Loin:
- Generously apply salt over the entire pork loin.
- Use a knife to score the skin and deeply pierce the meat to create pockets for the marinade.
3- Marinate:
- Pour the marinade over the pork loin, ensuring it covers all surfaces and penetrates the pierced areas.
- Place the pork loin with the marinade into a large clear plastic bag, secure it tightly, and refrigerate for 12 hours.
4- Preheat the Oven:
- Preheat a wood-fired oven to 180ºC.
5- Initial Roasting:
- Transfer the marinated pork loin to a large metal roasting pan.
- Cover the pan tightly with aluminum foil.
6- First Bake:
- Place the covered roasting pan in the preheated oven and roast for 2 hours at 180ºC to ensure tenderness.
7- Browning:
- After 2 hours, remove the aluminum foil.
- Continue roasting uncovered for another 1.5 hours to allow the skin to become crisp and brown.
8- Serve:
- Once roasted to a golden-brown color with a tender interior, remove from the oven.
- Let it rest for a few minutes before carving.
