Menonite cheeses, baked chiles and molten skillets

Northern Mexico produces some of the country’s most distinctive cheeses, thanks again to its cattle culture and Mennonite communities, especially in Chihuahua. Varieties like queso menonita, queso Chihuahua, asadero and ranchero appear in everything from table cheese to melty casseroles.
