Instructions
1- Prepare the Dough:
- In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat.
- Once it begins boiling, reduce the heat to low. Add the flour, mixing vigorously until the mixture forms a ball.
- Remove from heat and let it cool for 5 minutes.
- Add eggs one at a time, beating well after each addition. Stir in the vanilla extract until the dough is smooth and glossy.
2- Fry the Churros:
- In a deep fryer Cuisinart Deep Fryer or large pan, heat oil to 350°F (175°C).
- Spoon the dough into a pastry bag fitted with a large star tip Ateco Large Star Pastry Tip.
- Pipe 6-inch lengths of dough directly into the hot oil. Fry 4 to 5 churros at a time, turning them as needed until golden brown (about 2-3 minutes).
- Remove from oil and drain on a paper towel.
3- Coat and Fill the Churros:
- In a shallow dish, mix granulated sugar and ground cinnamon.
- Roll each churro in the cinnamon-sugar mixture to coat evenly.
- Using a narrow-tipped squeeze bottle, carefully inject each churro with dulce de leche, filling the center.
