Mashed plantain mains with garlic and crispy pork
Mofongo is one of Puerto Rico’s most iconic comfort foods: green plantains are fried (or sometimes boiled/roasted), then mashed in a pilón with garlic, salt, and often chicharrón (crispy pork). The result is a dense, savory mash that’s served as a centerpiece rather than a side—an edible “base” built to soak up broths, sauces, and juices.
